Many of you praised the past knife skills class because it was very hands on.  One student said she had taken other courses, but it wasn't until she experienced holding the knife and practicing the technique herself that she felt the accomplishment.  It makes a world of difference to your pleasure in the kitchen when you practice a new skill.  Do a little bit each day and you'll be wielding your knife with confidence and precision.
